In general, the region’s fish convinces with special quality characteristics. The secret: fresh spring water. Because the fish at the Zerza fish farm in Waidegg, at organic farmer Markus Steiner's Lenzhof farm or at the Zankl fish farm in Weidenburg, to name a few, live in clear, cold water of drinking quality. This spring water is colder than groundwater or water from larger rivers. As a result, the fish grow more slowly and the flesh is firmer. The outcome: a wonderfully unadulterated taste experience!
