Fresh croissants instead of sausage rolls
The first factory canteen on the way to Slow Food
Where fragrant hills were once formed from sawdust, one can now smell the aroma of fresh croissants early in the morning. Around a magnificent old saw, the internationally active timber trader Josef Thurner has established a cozy factory canteen and kitchen. With a fine breakfast and a self-service three-course lunch menu at canteen prices for the staff and the local population. Because, as Anna-Maria Thurner says: “I wanted my employees to eat something decent.” And also for everyone else who stops by and has little time to get good, regionally typical food at affordable prices. Sausage rolls were yesterday; now it is freshly cooked every day, with local purchases. Ingredients are produced in the best Slow Food manner: good, clean, and fair. The flour for the croissants also comes from the area, from the Italian side of the Plöcken Pass, “because Slow Food doesn’t stop at the border,” as Herwig Ertl, the convivia leader of Slow Food Alpe Adria, puts it.
