Slow Food Culinary Journey to Carinthia

The taste of the Gail Valley

What takes time to mature should be savoured slowly: the flavours of the Alps – meadow herbs, full-bodied Alpine cheese, traditional snack platters with smoked bacon, and salted fish from Lake Weissensee – are waiting to be discovered. Taste your way through culinary masterpieces in Hermagor and join cookery classes where top chefs reveal the secrets of their craft!

About the programme

Lerchenhof Castle – Culinary Delights in the Gitschtal Valley

After your arrival, you will enjoy your first dinner within the historic castle walls. The following day, a walk will show you how self-sufficiency can be achieved using locally generated hydropower.

Then it is time to get involved yourself: during a workshop in the Gitschtal Valley, the Kolmann and Bernhardt duo will invite you to explore Alpine food culture with all your senses – aperitif included.

Back at the Lerchenhof, your host will personally guide you through the pigsty and smoking chamber during a tasting of the original Gailtaler hay-fed and wine-cured bacon. Fermented vegetables – described as “a fountain of youth” by the head chef at the Daberer – will be the focus of the afternoon cookery class.

As a reward, you will be treated to an exquisite multi-course dinner prepared by Manuel Ressi, awarded four Gault&Millau toques, at the Bärenwirt restaurant.

Boat Trip – The Art of Fish Preparation

The journey continues on and around Lake Weissensee. A boat will take you to Markus Limarutti, who will introduce you to the art of fish preparation and treat you to delicious cured lake fish.

The afternoon is yours to enjoy – whether hiking, swimming or relaxing by the lakeshore. You will return to the hotel for dinner.

Culinary Delights of the Gail Valley – Alpine Cheese

In keeping with the Slow Food philosophy, Herwig Ertl introduces you to the flavours of the Alps-Adriatic region and the stories behind his specialities at the Edelgreißlerei delicatessen in Kötschach-Mauthen.

The next tasting takes you into the mountain landscape of Nassfeld. Surrounded by cowbells and wheels of cheese, Alpine dairywoman Elisabeth Buchacher practises her craft at the Watschiger Alm. Against a magnificent mountain backdrop, you can savour cheese specialities made from fresh Alpine milk.

The culinary “digestif” of the journey is a five-course vegetarian menu at the Daberer. Those wishing to savour the lingering taste of their holiday a little longer are welcome to extend their stay.

Nassfeld is delighted to collaborate with Ö1. In addition to its popular Sunday-morning programme “Ambiente – Reisen mit Ö1”, Ö1 offers a wealth of travel inspiration in its catalogue “Von der Kunst des Reisens”. Selected trips provide an opportunity to discover fascinating destinations from an entirely new perspective together with ORF/Ö1 editors.

Ö1 Club subscribers can book these trips at the advertised Ö1 Club preferential rates. The special rate also applies to one accompanying person.
